Mini Mathur Shares Favourite High-Protein Breakfast Idea For Fitness Lovers
Actor and TV host Mini Mathur has come up with a high-protein uttapam recipe that will definitely appeal to those not fond of protein shakes. In a video posted on her Instagram page, she demonstrated how you, too, could turn your protein powder into a tasty and healthy meal.
In case you can't stand the taste of protein powder and prefer to sneak it into your food, the actor's protein-rich uttapam recipe may just be the answer. She captioned the Reel, “For those peeps who like to eat their protein powder instead of drinking it.. this one was given to me by @shwvenkat and I make it ever so often!! (sic)"
A Simplified Recipe for a Nutritious Meal
To prepare the batter, she takes one scoop of protein powder, one scoop of psyllium husk (isabgol), one tablespoon of soaked chia seeds, a small bowl of chopped spinach and coriander, one egg white, salt, pepper, and cumin powder to taste, along with one chopped onion sautéed in ghee and a cup of water.
The batter is spread on a hot pan greased with ghee and shallow-fried on both sides until golden brown and crisp. Mathur recommends serving the uttapam hot with a spoonful of your favourite pickle.
Why It's Packed With Nutritional Benefits
This dish combines three powerhouse ingredients: protein powder, isabgol, and chia seeds.
In an interview with The Indian Express, Dr Vikas Jindal, Consultant, Department of Gastroenterology at CK Birla Hospital, Delhi, said that isabgol “is a soluble fibre that absorbs water and expands in the intestine, forming a gel-like material that softens the stool and facilitates bowel movements of normal consistency."
He added, “It is especially good for people suffering from chronic constipation or those having irregular bowel habits, and is gentle and safe if used for a longer period."
Dr Vikas cautioned that psyllium husk should always be taken with sufficient water. “Inadequate fluid intake can not only worsen constipation but may also cause blockage of the digestive tract. Generally, it is advised to consume psyllium with a minimum of one full glass (240 ml) of water, and then continue drinking water throughout the day," he explained.
Chia Seeds Aid Digestion and Boost Energy
The gastroenterologist also highlighted the digestive advantages of chia seeds. “If you are constipated, then consuming chia seeds regularly will definitely get your digestive system back in rhythm. But if you do not take enough water, they might cause swelling of the abdomen," he said.
Chia seeds are a great source of fibre, omega-3 fatty acids, and slow-release energy, essential for maintaining stamina and hydration throughout the day. Their high nutrient content strengthens the heart, lowers cholesterol, and promotes satiety — helping to prevent overeating.
A Balanced and Complete Meal
Dr Jindal emphasised that the protein powder in Mathur's dish helped meet daily protein requirements, while spinach and coriander add fibre and iron. The inclusion of ghee provides healthy fats, making the meal nutritionally complete.
