Method

Heat 1 tbsp oil in a pot; sauté chopped carrots, green onion and edamame.

Add remaining oil, garlic and ginger; sauté 1–2 minutes.

Add broth and soy sauce; bring to a boil.

Add pan-seared potstickers and half the scallions; cook 3–4 minutes.

Stir in sesame oil and black pepper; adjust seasoning and serve hot.

Ingredients

Blanched winter vegetables

Bok choy

Garlic, green chillies

Seasoning

Glass noodles

Coriander

Chilli-garlic oil

Method

Heat oil; sauté garlic and green chillies for 1 minute.

Add chopped vegetables; season with salt and pepper; sauté briefly.

Pour in stock; bring to a boil.

Turn off heat; add bok choy and coriander.

Pour into bowls, add glass noodles, and finish with chilli-garlic oil.

Ingredients

Cornet Shell: Warqi paratha dough, melted ghee, cone moulds.

Filling: Chicken tikka, onion paste, tomato purée, ginger-garlic paste, hung curd, cream, ghee, kasuri methi, garam masala, red chilli, turmeric, coriander powder, salt.

Garnish: Micro herbs, pickled shallots, mint mayonnaise.

Method

Cornet: Wrap dough strips around cone moulds, brush with ghee; chill 5 minutes. Bake at 190°C for 10–12 minutes.

Filling: Sauté ginger-garlic; add onion paste. Add tomato purée and spices; cook till ghee separates. Add chicken tikka, curd and cream. Add kasuri methi & garam masala; smoke with charcoal if desired.

Assemble: Pipe mint mayo inside cornet; fill with chicken; garnish with micro herbs & pickled shallots.

Ingredients

Dhokla Base: Gram flour, semolina, curd, water, turmeric, sugar, ginger-chilli paste, lemon juice, baking soda/eno, salt.

Tempering: Water, sugar, salt, lemon, mustard seeds, curry leaves, green chilli, oil.

Guacamole: Avocado, onion, tomato, coriander, green chilli, lemon, salt, roasted cumin.

Assembly: Tamarind chutney, toasted pumpkin seeds, feta, pickled shallots.

Method

Steam Dhokla: Mix batter, rest 10 minutes. Add eno, steam 12–15 minutes. Cut into toast-sized squares.

Toast: Lightly grill dhokla on a tawa.

Temper: Prepare the liquid tempering and pour over dhokla to soak.

Assemble: Spread tamarind chutney → guacamole → pumpkin seeds → feta → pickled shallots.

Ingredients

Mixed mushrooms, butter, olive oil, onion, garlic, milk, cream, vegetable stock/water, salt, pepper.

Method

Sauté onion and garlic in butter + oil.

Add mushrooms; cook until golden.

Add stock; simmer 8–10 minutes.

Add milk and cream; simmer 2 minutes.

Blend smooth; reheat and season.

Ingredients

Tomatoes, onion, garlic, ginger, kaffir lime leaves, lemongrass, coriander stems, green chilli, stock/water, olive oil, salt, sugar, crushed pepper.

Method

Sauté onion, garlic and ginger in oil. Add tomatoes and cook until soft.

Add stock, kaffir lime leaves, lemongrass, coriander stems, sugar and salt; simmer 12–15 minutes.

Finish with crushed pepper; serve hot.
