Why Tuesday Is The New Sunday For Brunch Lovers

For years, brunch occupied a very specific place in dining culture. It belonged to Sundays. It was leisurely, indulgent and often reserved for the luxury of having nowhere else to be. But as work schedules become more fluid and consumers increasingly prioritise experiences over routines, brunch is quietly undergoing a transformation.

Today, brunch is less a meal and more a mindset. Across India’s urban centres, diners are abandoning rigid meal-time structures in favour of more flexible, experience-led occasions. The rise of hybrid work, all-day dining concepts and café culture has blurred the traditional boundaries between breakfast, lunch and social gatherings.

“Brunch culture has evolved from being a weekend indulgence to becoming a more flexible, everyday dining occasion," says Krish Nayak, co-founder, Benedict’s. “The rise of café culture, all-day dining and hybrid work has blurred traditional meal-time boundaries, with consumers increasingly choosing a late breakfast, coffee or brunch based on convenience rather than the clock."

At a time when calendars are no longer dictated by office attendance five days a week, consumers are creating their own rhythms. A late breakfast can double as a team meeting. A midday coffee can turn into lunch. A weekday brunch can become the social occasion that weekends once exclusively owned.

When Restaurants Become Third Spaces

The biggest shift isn’t necessarily what people are eating, but why they’re gathering.

At Benedict’s in Bengaluru’s JP Nagar, Nayak says diners are increasingly using brunch as a backdrop for multiple parts of their lives. Guests arrive for informal meetings, remote work sessions, catch-ups with friends and even solo workdays, often lingering over Eggs Benedict, breakfast platters, pancakes and speciality beverages ranging from coffee and matcha to cold brews.

“The same guest who visits for a morning coffee meeting may return later for a casual catch-up over wine or soju," says Nayak. “Consumers are no longer viewing dining occasions through rigid meal-time lenses."

The trend reflects the emergence of restaurants as modern-day third spaces—venues that sit somewhere between home and office. Comfort, flexibility and atmosphere have become just as important as the food itself.

Demand for adaptable spaces has naturally followed. Whether it’s an outdoor table on a pleasant morning or a quieter indoor corner for a few hours of work, diners are seeking venues that fit seamlessly into different parts of their day.

The Hybrid Work Effect

Few businesses have observed this shift as closely as BLVD Club by Embassy, located in North Bengaluru’s rapidly expanding residential corridor.

According to Chef Vikas Seth, the transformation in dining behaviour mirrors the broader evolution of work culture.

“Brunch was once the exclusive domain of leisurely weekend mornings, but consumer habits have undergone a profound transformation over the past few years," he says. “Today’s guests seek flexible, experience-led dining that fits into their schedules rather than traditional meal-time boundaries."

The neighbourhood surrounding BLVD has become home to a growing mix of townships, villa communities and premium residential developments. With more professionals working flexibly and spending greater amounts of time within their local communities, dining out has become a weekday activity rather than a weekend reward.

“We increasingly see families, entrepreneurs, professionals working remotely and community groups choosing weekday daytime dining for informal meetings, catch-ups and leisurely meals," says Seth.

The result is a customer base that values flexibility above all else. Rather than rushing through meals, guests are choosing experiences designed for lingering.

Dining Designed for Lingering

As brunch evolves into an all-day occasion, menus are evolving alongside it. At BLVD, dishes such as the Scarlet Delight Brie & Cranberry Crostini, the Nawabi Panna Tikki and the Italian Chocolate Salami board have been designed around sharing, conversation and extended dining experiences.

“We have responded to the growing demand for relaxed daytime dining by curating experiences that seamlessly blend culinary craftsmanship with a warm, unhurried ambience," says Seth.

This emphasis on atmosphere and experience is becoming increasingly important across the hospitality sector. Diners aren’t simply looking for a meal; they’re looking for an environment that accommodates everything from business conversations and networking to family gatherings and personal downtime.

“The broader shift is clear," Seth adds. “Consumers today prioritise flexibility, connection and experiential dining, making brunch less of a weekend ritual and more of a lifestyle-driven occasion that can happen any day of the week."

Why Hospitality Is Rethinking Daytime Dining

The shift has also prompted luxury hospitality brands to reconsider how they approach daytime dining. At ITC Windsor Bengaluru, brunch is increasingly being viewed as part of a broader movement toward experience-led dining.

“Brunch has evolved from a weekend indulgence to a more experience-led dining occasion, driven by changing lifestyles and flexible work cultures," says Ritesh Arora, Food & Beverage Manager, ITC Windsor Bengaluru.

The hotel has seen growing demand for Saturday brunches and leisurely daytime experiences that allow guests to spend extended periods dining, socialising and reconnecting.

Hybrid work culture has further accelerated the trend. “We are seeing a growing preference for Saturday brunches, with guests seeking leisurely, immersive dining experiences," says Arora. “Hybrid work culture and flexible schedules have transformed weekday dining habits, with more people opting for leisurely lunches during the week."

These occasions are increasingly serving as alternatives to traditional office meetings. Working lunches, client interactions and collaborative sessions are now commonplace, with guests often remaining at a venue for several hours.

“Dining today is as much about socialising and collaboration as it is about the food," Arora explains. “We are seeing a clear shift towards more flexible dining habits, with guests increasingly opting for extended lunches, early dinners and breakfast meetings."

The Future of Brunch Is Flexibility

As dining habits continue to evolve, restaurants and hotels are responding by creating spaces designed for modern lifestyles rather than traditional meal occasions.

From wellness-focused menus and sustainable ingredients to family-friendly programming and comfortable environments, hospitality brands are recognising that today’s consumers seek far more than food alone.

According to Arora, guests increasingly value variety, comfort and meaningful experiences that extend beyond what’s on the plate. Whether it’s a weekday breakfast meeting, a Saturday family brunch or an afternoon catch-up between remote work sessions, the common thread is flexibility.

Perhaps that’s why brunch feels more relevant than ever. What was once confined to a few weekend hours has become an all-day, all-week occasion that reflects how people live, work and connect today. The traditional rules surrounding meal times are disappearing, replaced by a more fluid approach to dining where convenience, experience and community take centre stage.

Brunch, it turns out, was never really about the food. It was about making time to slow down. The only difference now is that people are doing it whenever they want.
