From feta-stuffed phyllo bites to mezze-style canapés, Mediterranean flavours offer a global escape that feels intuitive to the Indian palate.

Chef Bhagyesh Tekriwal, Founder, SORBO, explains that with people travelling and exploring new flavours, dining today is driven more by experience than simply eating out.

He sees Middle Eastern cuisine gaining traction because it mirrors India's love for depth and comfort while maintaining a clean and balanced approach. “This shift is about intentional eating with food that is nourishing and satisfying," he adds.

From smoky kebabs and herb-packed tabbouleh to hearty grains like bulgur and couscous, this is a cuisine that feels both familiar and refreshingly global. Its rise signals a move toward dishes that deliver warmth without heaviness.

Thai flavours are experiencing a renaissance as diners seek authenticity. Scotchie Kandhari, Founder, Easy Tiger, observes that guests today aren't just ordering Thai food; they're seeking an experience that reflects what they've tasted while travelling.

There's a clear shift toward lighter fare such as broths, salads, fresh grills, alongside classics like curries and stir-fries. Kandhari says, “The brightness of kaffir lime, the aromatics of lemongrass, and the fragrance of Thai basil are drawing diners in, with regional Thai dishes gaining momentum."
