Anurag Singh, CEO, Temple Street, feels the popularity of Ghee Podi Masala Dosa reflects this growing appreciation for regional flavours. “The growing popularity of Ghee Podi Masala Dosa across Delhi NCR reflects how regional Indian flavours are increasingly becoming mainstream. Consumers today are far more curious and well-travelled, and they’re actively seeking authentic experiences. What was once considered a distinctly South Indian staple has now evolved into a comfort food enjoyed across geographies."
That curiosity is changing not only what people order, but also what restaurants choose to serve. Diners increasingly expect traditional recipes prepared with quality ingredients rather than simplified adaptations.
Temple Street has seen this first-hand, with the dish consistently ranking among its best sellers.
“We believe its appeal lies in the balance of familiarity and flavour. The richness of ghee, the spice and texture of podi, and the crispness of a well-made dosa create a deeply satisfying experience that resonates with a wide demographic," says Singh. “We’ve also observed that diners increasingly appreciate authenticity in preparation. They want traditional flavours made with quality ingredients and consistency."
While authenticity is driving curiosity, familiarity remains equally important. The combination of crisp dosa, spiced potato filling, aromatic podi and generous amounts of ghee creates a flavour profile that naturally appeals to North Indian diners accustomed to rich, comforting meals.
Shantanu Yadav, co-founder, Atmanam, believes this balance has played a significant role in the dish’s growing popularity.
“The boom of Bangalore-style Ghee Podi Masala Dosa in Delhi NCR is mainly because it feels both new and familiar at the same time. For a long time, we were more used to Chennai-style dosas here, so podi dosa brought a different flavour profile altogether."
He also points to Delhi NCR’s longstanding preference for indulgent flavours.
“Delhi NCR has always had a strong preference for rich and indulgent flavours, whether it is butter, cream or ghee, so this naturally connects with the North Indian palate. In a way, it gives a similar sense of comfort and satisfaction that people here often associate with dishes like parathas."
Yet the appeal goes beyond indulgence alone.
“What also works is that it feels like a complete meal on a plate with the dosa, aloo, chutneys and podi coming together. Younger diners today want bold flavours and better techniques, but they are also becoming more conscious about health and ingredient quality, and I think this balance is what makes dishes like Ghee Podi Dosa so relevant today," Yadav adds.
While social media may have amplified the popularity of Ghee Podi Dosa, many restaurateurs believe its success represents something deeper than a viral food moment.
For Sheetal Saxena, Founder of Café Athyeka, the renewed interest in regional South Indian cuisine marks a long-overdue shift in consumer behaviour.
“The growing popularity of Ghee Podi Dosa is often described as a trend, but I see it as a correction. For years, South Indian cuisine outside the South was compressed into a handful of familiar dishes, often adapted to suit local expectations. Today’s diners are reversing that."
Consumers, she explains, are becoming increasingly interested in the stories behind the food.
“They’re asking where a dish comes from, why one podi tastes different from another, why some regions favour sesame oil while others rely on ghee, or how a dosa changes from Karnataka to Tamil Nadu. That curiosity is reshaping menus far more than any viral food trend."
For Saxena, Ghee Podi Dosa has become symbolic of a larger movement that celebrates India’s regional diversity rather than reducing it to a handful of recognisable dishes.
“I believe the future belongs to restaurants that preserve regional nuance instead of simplifying it. The conversation is no longer about introducing South Indian food to North India; it’s about introducing the many South Indias that have always existed."
The success of Ghee Podi Masala Dosa reflects a broader transformation taking place across India’s restaurant industry. Consumers are no longer satisfied with generic versions of regional cuisines, they want dishes that carry a sense of place, tradition and authenticity.
Whether it’s premium ingredients, traditional preparation methods or recipes rooted in local culture, diners are rewarding restaurants that stay true to their origins while making those experiences accessible to new audiences.
In that sense, the popularity of Ghee Podi Masala Dosa isn’t just about one dish. It’s a sign that regional Indian cuisine is entering a new chapter, one where authenticity, craftsmanship and cultural storytelling are becoming just as important as flavour itself.
